
Yaye — Ethiopia Natural · 74518 Located in Sidama, the Yaye Washing Station collaborates with 50 smallholder growers within a 10 km radius. Established in 2021, the station prioritises controlled harvesting, careful cherry selection, and clean processing. Cherries are sorted for ripeness, washed with potable water, and dried slowly on raised beds to achieve stable moisture levels before resting and milling. The result is a traceable lot produced with consistent structure and attention to detail. This release is part of the Odakko Project — four years of pre-harvest planning focused on peak-ripeness selection and meticulous drying to highlight a singular flavour profile. Cherries were hand-sorted, shade-dried slowly over 28 days, then rested before milling. Every step was intentional. Expect bergamot, red cherry, and chocolate. Bright, floral, and juicy. Feels alive as filter, hits hard and juicy as espresso.
