Ethiopia Yirgacheffe Gedeb Quality begins with meticulous hand-harvesting. Once delivered to the washing station, the cherries undergo a rigorous sorting process. After pulping, the beans are fermented for 48–72 hours before being washed and floated to remove any minor defects. The final stage takes place on traditional African raised beds, where the parchment is sun-dried for up to 16 days until reaching the perfect 11.5% moisture content.
