The Coffee Growing Region Located in the "Southern Nations, Nationalities & Peoples" (SNNP) region, the Gedeb district has rapidly earned a reputation for producing some of the world’s most sought-after profiles. Grown at staggering altitudes of up to 2100 MASL, these heirloom varieties mature slowly under the canopy of native Zigba and Kererro trees, alongside food crops like Enset (false banana), potato and soybeans. This rich biodiversity contributes to the deep, layered complexity found in every cup. The Process Quality begins with meticulous hand-harvesting. Once delivered to the washing station, the cherries undergo a rigorous sorting process. After pulping, the beans are fermented for 48–72 hours before being washed and floated to remove any minor defects. The final stage takes place on traditional African raised beds, where the parchment is sun-dried for up to 16 days until reaching the perfect 11.5% moisture content. The result is a Grade 1 Specialty coffee with exceptional clarity and a sparkling acidity. Tasting: Ripe mango, strawberry, honey, and bright fruity undertones. Texture: Creamy and smooth.
