This coffee isn't just a testament to Ethiopia’s incredible terroir; it is a tribute to a family’s enduring passion for the craft, spanning generations of upheaval and triumph. The Story Behind the Bean The Harosema washing station is more than a processing facility; it is the realization of a vision nearly lost to history. In 1974, Alemayehu (the father of current producer Gizaw) saw his expansive Yirgacheffe coffee farms nationalized by a new socialist government. Witnessing the loss of his family’s livelihood, a young Gizaw originally turned away from farm ownership. However, the pull of the cherry remained. Driven by his father’s original vision, Gizaw—alongside his wife, Frehiwot—decided to innovate. Instead of traditional farming, they focused their expertise on modern coffee processing. By establishing washing stations in Dimitu, they have created a standard of excellence that honors their family name while navigating a modern coffee landscape. Precision Processing Quality at Harosema is achieved through meticulous patience: Hand-Picked : Only the ripest cherries are selected by hand in Harosema village. Density Sorting : Cherries are graded using density channels to ensure only the most concentrated flavors move forward. Controlled Drying : The cherries are dried slowly over 20-28 days. To protect the delicate sugars, the fruit is shaded during the peak heat of the day (12–3 p.m.) and turned frequently to reach a perfect 11.5% moisture content Tasting: Bursting with the brightness of ripe Peach and Tropical Fruit perfectly balanced by smooth Caramel undertones.
