Sweet peach and lemonade notes with a lively floral aftertaste. For the month of September, this is our subscription exclusive coffee, exclusively available via a Filter Roast Subscription or Espresso Roast Subscription. From El Ocaso, a 30-hectare farm in Salento, Quindío, Santiago Patiño produces exceptional coffees at 1800-1840 MASL. A third-generation grower, Santiago combines regenerative agriculture with innovative processing, creating complex flavour profiles from both traditional and exotic varietals. We paid 30% above the Fair Trade Price for this coffee. Learn more here. El Ocaso has been in Santiago’s family since 1985, shifting from cattle and coffee to solely coffee production by 2004. That same year, the farm began experimenting with natural, honey, and innovative fermentation methods, leading to distinctive and complex flavour profiles. Santiago has since introduced exotic varieties including Gesha, Sidra, Tabi, Caturra, Papayo, and SL28, alongside traditional Colombian cultivars. Regenerative practices such as organic pest control, composting coffee husks, and maintaining shade trees help protect the farm’s biodiversity and create ideal conditions for slow cherry maturation. Despite challenges like climate change and labour shortages, Santiago remains committed to preserving his family’s coffee legacy. Through his partnership with Cofinet, he shares El Ocaso’s coffees with a wider audience, continuing to refine processes and pass knowledge to the next generation.
