Soft, full cocoa sweetness with lifted stonefruit acidity and a delicate floral finish. This ultra-small nano lot of just 180 kg was selected from only 50 special lots produced by Pedro this season. A relatively new process for the farm, Black Honey highlights Pedro’s ongoing curiosity and willingness to experiment. Ripe cherries have their skins removed while retaining as much mucilage as possible, before being carefully fermented and dried on raised beds. Constant turning helps manage the sticky sugars as they dry slowly, building depth, sweetness and complexity in the cup. Pedro Teixeira, the son of Jo ã o Newton, is of his family’s fifth generation of coffee growers. As one of our longest-serving partners, Pedro maintains a proud focus on both quality and sustainability, priorities that shine with every coffee we receive from him. In 2019, Pedro received the award for Brazil’s Most Sustainable Farm (Globo Rural magazine). Pedro and his operation also received carbon positive status in 2021 after a year-long assessment of farm practices. Maintaining an ever-progressive focus on keeping their approach to farming sustainable, local and sensitive to the environment around them, Pedro and his family have also built a large shelter for hurt or trafficked birds. Called Wings, this special program has been so successful that the team has recently added a second shelter to the mix.
