Bolivia Las Alasitas Coco Natural Gesha Filter - Single Origin. This lot highlights the Rodríguez family's resource efficient, precision drying techniques at Agricafe's Buena Vista mill. For harvest, trained pickers from Villa Rosario and Beni communities selectively handpick only the ripest, near-purple cherries. The farm manages around 40 worker families, ensuring multiple passes through the farm for peak ripeness and maximum sweetness in this special lot. Cherries arrive at the mill in the evening for inspection, weighing, and sorting by density in water using an efficient large capacity machine nicknamed; “La Maravilla", which disinfects while recirculating and treating water for minimal environmental impact. The cherries are then carefully washed and drying takes place on patios for 48–72 hours. This is followed by transfer to stationary "coco" box dryers inspired by peanut drying. The steel containers use gentle warm air flow and regular manual stirring for slow, even drying across two weeks.
