<p>We’re proud to feature coffee from Audiel Moreno for the second year in a row. A member of the legendary Moreno family—pioneers of specialty coffee in Santa Barbara, Honduras since 1963—Audiel represents the next generation of producers with a fierce commitment to quality. This lot is 100% Pacas, a Bourbon mutation prized for its tropical acidity and honeyed sweetness. Though delicate and disease-prone, Pacas rewards attentive farming with outstanding cup character. Cherries are selectively handpicked and transported by mule to his mother Juana’s wet mill. After depulping, they undergo a 14–16 hour dry fermentation before being fully washed and sorted. Parchment is then pre-dried on raised beds and finished in a solar dryer over 8–18 days. Audiel began farming at 12 and inherited his first plot at 16.
