Later, cherries were exposed to a dry anaerobic fermentation of 50 hours inside rum barrels . Later placed on raised beds until ideal moisture content is achieved. Coffee is then once again rested inside rum barrels for 10-20 days. This microlot is 100% Castillo. This variety was developed by Federación Nacional de Cafeteros.
